This is an unripened, brined cheese made from a mixture of goat's and sheep's milk, and a small amount of grade A cow's milk. It has a high melting point and so can easily be fried or grilled, yet stays within its shape and form.

This hard goat's cheese is a semi-firm to hard cheese made from pasteurised milk and microbioligical rennet. The cheese develops flavour as it matures.
